Chocolate Ganache

RECIPE:
Servings: Makes 3lb

Soft Ganache Ingredients:
570 grams white/milk/dark chocolate, finally chopped/morsels/chips
910 grams heavy cream

Medium Ganache Ingredients:
910 grams dark or milk chocolate, finally chopped or morsels/chips
910 grams heavy cream

Directions:

  1. Place the chocolate in a mixing bowl.
  2. Heat the cream in a pan on the stove until it starts to simmer but before it boils. Take it off the heat and pour on top of the chocolate.
  3. After one minute, stir the mixture gently until chocolate is melted. Strain it to ensure a smooth consistency.
  4. Cover with plastic wrap so that the wrap is just above the surface of the ganache, which will prevent a film from developing on the surface. Refrigerate over night or for at least 4 hours.
  5. Whisk to desired consistency before using.
