I love days when I can leisurely make and enjoy breakfast. It’s my favorite meal of the day and getting to have something hearty and sweet just makes my day. Followed with a big mug of coffee and I’m ready to tackle the errands of the day. Of course if it also happens to be healthy, then all the better and I can have it more often! This recipe is healthy, delicious and great for days when you can’t get any lazier.
RECIPE:
Servings: 6-8 pancakes
INGREDIENTS:
2 ripe bananas
3 eggs
3/4 cup quick cooking oats
1/4 cup chocolate chips
Pinch of salt
METHOD:
- In a mixing bowl, mash the bananas until they are puréed. You can make them as chunky or as smooth as you like.
- Whisk in the eggs. Then add the remaining ingredients and mix until fully combined.
- Lightly grease a pan with either butter or cooking spray and turn on stove heat to medium-high. Pour in 1/3 cup of batter into the pan and cook until golden brown on both sides.
- Serve with maple syrup and/or fruit of your choice.
