Quick Oats Pancakes

I love days when I can leisurely make and enjoy breakfast. It’s my favorite meal of the day and getting to have something hearty and sweet just makes my day. Followed with a big mug of coffee and I’m ready to tackle the errands of the day. Of course if it also happens to be healthy, then all the better and I can have it more often!  This recipe is healthy, delicious and great for days when you can’t get any lazier.

RECIPE:
Servings: 6-8 pancakes

INGREDIENTS:
2 ripe bananas
3 eggs
3/4 cup quick cooking oats
1/4 cup chocolate chips
Pinch of salt

METHOD:

  1. In a mixing bowl, mash the bananas until they are puréed. You can make them as chunky or as smooth as you like.
  2. Whisk in the eggs. Then add the remaining ingredients and mix until fully combined.
  3. Lightly grease a pan with either butter or cooking spray and turn on stove heat to medium-high. Pour in 1/3 cup of batter into the pan and cook until golden brown on both sides.
  4. Serve with maple syrup and/or fruit of your choice.
