Actually these are Banana Choc Chip Coconut Muffins….Yes, I know that’s a mouthful! The real stars of the show are of course the chocolate chips and bananas; the coconut flavor is just a nice subtle touch with a lovely whiff and very light aftertaste. I love the texture of these muffins because they are just a little crisp on the outside, and very moist and fluffy on the inside. Trust me…they disappear fast!
Servings: 12 muffins
1 2/3 Cup of All Purpose Flour
1 Cup of Chocolate Chips
1 tsp Baking Powder
½ tsp of Baking Soda
¼ tsp of Salt
¼ tsp of Cinnamon
½ Cup of Sugar
½ Cup of Coconut Oil
3 Mashed Bananas
¼ tsp of Vanilla Extract
Preheat oven to 400ºF. Line or grease a 12 piece muffin tin.
In a small bowl mix the chocolate chips with 2 tbsp of the flour, and set aside (this will prevent the chips from settling to the bottom and will spread evenly throughout the muffin).
Add the baking powder, baking soda, salt and cinnamon to the remaining flour.
In another large bowl, mash the bananas with a fork. Add the oil, eggs and sugar and whisk together.
Then add the flour mixture and whisk until fully incorporated. Finally mix in the choc chips and spoon evenly into the muffin tray (approx. 1/4 cup each).
Place in the oven for 16-18 minutes and rotate the tray midway to ensure even baking.
